Copycat Panera® Broccoli Cheddar Soup

This broccoli Cheddar soup recipe is easy to make and delicious!

Rich in fibers and micronutrients like vitamin A, vitamin C, vitamin K, vitamin B6, folate, potassium, calcium, manganese to name a few, this soup is definitely a favorite winter comfort meal. I wouldn't recommend if you're congested because the dairy in this can make it worse, but if you need a little soul healing and warming this is great. And it can be stretched out across the week, saving you time and money for lunch!

Christie's Take 

  • 1 tablespoon butter

  • ½ onion, chopped


  • ¼ cup melted butter

  • ¼ cup flour

  • 2 cups milk

  • 2 cups chicken stock

  • 1 ½ cups coarsely chopped broccoli florets

  • 1 cup matchstick-cut carrots

  • 1 stalk celery, thinly sliced

  • 2 ½ cups shredded sharp Cheddar cheese

  • salt and ground black pepper to taste
