Kale and Sweet Potato Baked Eggs with Goat Cheese

The breakfast of a winner, nutrient dense and filling with sweet potatoes, kale, eggs, and goat cheese!

This is my first go to breakfast-- if I can get my veggies and protein in first thing of the day, I know it'll be a good day with my digestive system, mental clarity and all. this recipe is pretty easy to make which makes it even better, and can be made while you get ready in the morning. Not only are you getting your protein, you're getting all the benefits of kale, like vitamin A, Vitamin K (helps with bone strength and blood clotting - if your blood doesn't clot enough you just bleed all day), improvement of digestion and colon health, it's heart healthy, helps your skin glow and some more stuff. Ask your doctor-- I bet you they recommend and applaud you for eating this breakfast!

Christie's Take 

  • Olive oil

  • 1 large sweet potato, chopped into small cubes

  • ½ large onion, sliced thin

  • 1 large bunch of lacinato kale, stems removed and sliced into thin ribbons

  • ½ tsp La Baleine Essentiel, plus more to taste

  • Pepper

  • 3 - 4 large eggs

  • ¼ cup crumbled goat cheese or feta
