Lemon Butter Chicken

Easy crisp-tender chicken with the creamiest lemon butter sauce ever - you'll want to forget the chicken and drink the sauce instead!

Now y'all know this is my favorite recipe, and I don't even eat meat like that! It's the creamy, lemony goodness of it all. It's actually pretty easy to make too and be having me feeling like Chef Boyard C in this mug! Not only is it delicious, you know it's nutritious too! Lemon comes with a lot of Vitamin C may aid weight loss and reduce your risk of heart disease, anemia, kidney stones, digestive issues, and cancer. The chicken bring lots of protein, iron and zinc. All of this makes this comfort dish perfect for boosting your immune system. I tried to pair it with rice-- it's cool. But might be better with some roasted veggies, like broccoli, brussels sprouts or even asparagus, which can't do nothing but make the meal even healthier and delicious. Thank me later!

Christie's Take 

  • 8 bone-in, skin-on chicken thighs

  • 1 tablespoon smoked paprika

  • Kosher salt and freshly ground black pepper, to taste

  • 3 tablespoons unsalted butter, divided

  • 3 cloves garlic, minced

  • 1 cup chicken broth

  • ½ cup heavy cream

  • ¼ cup freshly grated Parmesan

  • Juice of 1 lemon

  • 1 teaspoon dried thyme

  • 2 cups baby spinach, chopped
