SWEDISH MEATBALLS

Nothing beats homemade meatballs smothered in a creamy gravy sauce, and yes, they taste so much better than the IKEA version!

If you have high blood pressure or pork sensitivities, stay away or replace pork with ground beef or chicken! Of course, it will alter the taste, but hey, better than spiking your blood pressure. This is another great recipe for meal prepping and creating a variety of meals on one recipe! If you're wanting to improve exercise performance or increase calorie intake for bulking, definitely add this to your meal prep for hte week. Beef offers niacin, riboflavin, vitamins B6 and B12 - which help reduce tiredness and fatigue.

Christie's Take 

  • 2 tablespoons olive oil, divided

  • 1 onion, diced

  • pound ground beef

  • 1 pound ground pork

  • ½ cup Panko*

  • 2 large egg yolks

  • ¼ teaspoon ground allspice

  • ¼ teaspoon ground nutmeg

  • Kosher salt and freshly ground black pepper, to taste



FOR THE GRAVY

  • ¼ cup unsalted butter

  • cup all-purpose flour

  • 4 cups beef broth

  • ¾ cup sour cream

  • Kosher salt and freshly ground black pepper, to taste

  • 2 tablespoons chopped fresh parsley leaves

*Panko is a Japanese-style breadcrumb and can be found in the Asian section of your local grocery store.
